雲嘉南蔬菜生產區之蔬菜重金屬含量之安全性評估

本研究分別於2012、2013、2014年於雲嘉南地區蔬菜產區共收集了植體及土壤樣本各600 個,蔬菜樣本採自雲林縣西螺鎮、莿桐鄉、東勢鄉、二崙鄉、嘉義縣新港鄉、六腳鄉、臺南市南區等7個主要蔬菜產區,統一送農業試驗所分析,以建立土壤資料庫及農業環境地理資訊系統,期待能夠降低農產品重金屬污染之安全疑慮,提高消費者食品安全的信心,減少農產品銷毀成本,提供降低農產品重金屬管理方案,分析結果顯示,土壤部份之銅含量均低於140mg/kg,鋅含量均低於248mg/kg,鎘含量均低於3.48mg/kg,鉛含量均低於50mg/kg,砷含量均低於36mg/kg,汞含量均低於1.04mg/kg;植體(可食用部位)重金屬平均濃度(乾基)分別為銅含量1.13∼69.6mg/kg,鋅含量7.52∼215mg/kg,鎘含量0.01∼2.01mg/kg,鉛含量0∼5.35mg/kg,砷含量0∼10.7mg/kg,汞含量0∼0.07 mg/kg。各重金屬濃度以小葉菜類風險性最高,安全性最低,其它類別蔬菜則隨著重金屬種類不同濃度高低而有所不同。

現有技術:以往缺乏大面積調查土壤特性與蔬菜生產的安全性分析。

創新內容:本研究則整理近三年雲嘉南地區土壤及蔬菜樣品分析資料。

對產業影響:證實雲嘉南正常農田環境下,蔬菜安全性高。不同作物之重金屬吸收力不同,可針對不同土壤重金屬背景值栽種確保蔬菜安全性,針對雲嘉南地區建立土壤資料庫及農業環境地理資訊系統,期待能夠降低農產品受重金屬污染之安全疑慮,提高消費者食品安全的信心,減少農產品銷毀成本,提供降低農產品重金屬管理方案。

Evaluations of Heavy Metals in Soil and Safety of Vegetables in Yulin, Chiayi and Tainan Area

Abstract

The 600 plant and soil samples were collected from the 7 major vegetable production areas, including Hsilo, Cihtong, Dongshih, Erlun, Singang, Lioujiao and South district of Tainan city, in 2012, 2013, 2014. The samples were analyzed by Taiwan Agricultural Research Institute (TARI, COA). The data in this study were helped to established soil database and geographic information system of agricultural environment. We hoped this study can rise the confidence of food safety from consumer, decrease the cost in destruction of agricultural products and provide the program for soil heavy metal management. The results showed that most of the Cu content of the soil is less than 140 mg/kg, Zn content is less than 248 mg/kg, Cd content is less than 3.48 mg/kg, Pb content is less than 50 mg/kg, As content is less than 36 mg/kg, Hg is less than 1.04 mg/kg. The average heavy metal content in Cu, Zn, Cd, Pb, As, Hg of vegetables in edible part in dry tissue were 1.13~69.6 mg/kg, 7.52~215 mg/kg, 0.01~2.01 mg/kg, 0~5.35 mg/kg, 0~10.7 mg/kg, 0~0.07 mg/kg, expectatively, According to the result, leaf vegetables (such as Cu, Zn, Cd, Pb, As and Hg) showed the higher risk in heavy metal content, but the heavy metal content in other vegetables were various with species.

What is already known on this subject?
Due to the few study about large scale soil characteristics investigation and vegetable production safety in the past.

What are the new findings?
We revealed the soil characteristics and safety of vegetables within three years in this area.

What is the expected impact on this field?
The result revealed the safety of that vegetables was high in normal farm environment, and the heavy metal absorption was various with different corps, and the vegetable safety could be made sure due to different soil characteristics. According to establish soil database and geographic information system of agricultural environment in Yulin, Chiayi and Tainan area. We hope these results will be able to reduce heavy metal risk of agricultural products, increase consumer confidence in food safety, reduce the cost of agricultural products destruction, and provide the programs in heavy metal management in agricultural products.
