摘  要

蘆筍根部可溶性碳水化合物含量很高,冬季一、二月間可達60%或更高,而根莖則很低,約為根部的六分之一,由碳水化合物含量分析結果證實蘆筍地上部莖葉行光合作用的光合產物主要轉運到根部貯存起來,所以稱為貯藏根,而根莖祗是碳水化合物轉運的通道而已,又澱粉在根莖及根部的含量均很低,均在2%以下。可見其在蘆筍生長代謝上並不重要。碳水化合物含量與貯藏根直徑大小及雌雄植株無關,但與貯藏根的成熟與否有關,而以成熟根含量最高,老根次之,而以幼根含量最低,與貯藏根的不同部位亦有關,越接近根莖的部位,含量越高,在品種間,由供試的六個品種的分析結果,差異亦不大,這個與品種地上部植株間的特性接近有關。

The Content and Distribution of Carbohydrates in Asparagus Rhizome and Storage Roots

Summary

Results from analysis of soluble carbohydrates showed that high soluble carbohydrate content in storage roots and is much lower in rhizome.  It indicated that carbohydrate of photosynthetic products from the mother stalks of the asparagus plant could be translocated and reserved in storage roots for the growth of spear and plant.

Rhizome acted mainly as a pathway of soluble carbohydrate.

The starch content of both rhizome and storage root was relatively low, not exceeding 2% of dry weight.  This indicated that stored starch was not important in the growth of asparagus.

Also, the carbohydrate content proved to be not related to sizes of storage roots and plant sexes but related to maturity of storage roots.  The carbohydrate content also varied at the different parts of the storage roots.  The closer to the rhizome revealed the higher the carbohydrates content.
