加工用洋蔥仔球之培養及加工技術之研究

摘  要

(一)適于醃漬(Pickle)的洋蔥仔球大小以直徑1.0∼3.5公分之間為最恰當,形狀為圓形或扁形最佳。(二)醃漬法以C法為佳,其醃漬品以酸味醃漬(Sour pickle)較合于歐美消費者口味,甜味醃漬(Sweet pickle)則較合于本省消費者口味。包裝則以瓶裝為主。(三)栽培品種以臺南一號,臺南選二號,勝早玉,F1 Hybrid Alamo white 為佳,播種量為14∼161bs/0.1ha。

Summary

1. A round or flat onion set with diameter between 1.0 to 3.5 cm was the most suitable shape and size for pickling.

2. Method C is better than others in pickling process.  European and Western consumers favor sour pickling, while domestic consumers prefer sweet pickling.  Glass bottle was used for packing.

3. Most suitable cultivars used for pickling were Tainan No. 1, Tainan selection2, Granex, F1 hybrid Alamo white.  Seeding rate was 14 to 16 pounds per 0.1 ha.
